Fast, Simple Comfort Food Tomato Bacon Fusilli

Getting tired of your typical dish you make for comfort food? Then you should try this awesome recipe, it is not to disappoint. It is a creamy, cheesy, bacon flavored, pasta dish. Oh, and throw in a few tomatoes to say you got your veggies.

No, in all seriousness. If you are tired of the mundane Macaroni and Cheese Dish then this is a must try! It has incredibly simple ingredients that you will almost always have on hand, and it is rather quick to make. You are guaranteed to love it.

My husband and I came across this recipe a few years ago, off of the back of a box of Pasta we bought. At the time, we were on a pretty low budget. That was even before we had kids. Nonetheless, this ended up being one of the meals that we would make all the time. It was filling, we almost always had leftovers, and it was just downright delicious.  We thought it needed a little bit of this and a little bit of that, so we make the adjustments and they turned out perfect.

This is a fantastic recipe if you have kids, and need a break from Pasta with Red Sauce.

Tomato Bacon Fusilli

Prep Time: 12 min

Cook Time: 15 min

Serving Size 4-6 people

Ingredients

  • 16 oz. Fusilli Pasta (if you can’t find Fusilli, use Rotini)
  • ¼ cup margarine or butter
  • ¼ cup all-purpose flour
  • 1 tsp. salt
  • ¼ tsp. black pepper
  • 2 ¾ cups milk
  • 1 ½ cups grated Parmesan cheese
  • 1 package bacon, cooked and crumbled
  • 2 medium tomatoes, chopped

Directions

  1. Cook the Fusilli according to package directions.
  2. Drain, cover and set aside.
  3. In a large saucepan, melt margarine or butter, which ever you are using.
  4. Stir in flour, salt and pepper, using a whisk, pour in the milk.
  5. Cook, stirring constantly, until thickened and bubbly.
  6. Add in Parmesan cheese, crumbled bacon, chopped tomatoes, and pasta; toss to coat.
  7. Heat through and serve immediately.

You can top this with fresh or dried parsley, as well as, additional Parmesan cheese to your liking.
