If you are not a big fan of the spaghetti type pasta. This is a perfect dish for you to enjoy. It’s easy to follow, not a whole lot of involvement. Just follow step by step and you are able to cook up a fantastic scrumptious meal your whole family will LOVE.

I came across a similar recipe over the internet. As always, I made my adjustments where I saw fit, and now it is a staple meal in my family. It feels so good to be able to cook up an easy dish, that is healthier for my kids & husband to enjoy. I hope you like it just as much as we do.

Quick Amatriciana-Style Rigatoni

Prep Time: 10 minutes

Cook Time: 25 minutes

Serves 4-6 people

Ingredients

  • ¼ cup Extra Virgin Olive Oil
  • One clove garlic, minced
  • ½ tsp. or to taste chopped red pepper flakes
  • 1 ½ cups chopped white onion
  • One cup fresh mushrooms, chopped (optional)
  • 10 oz. pancetta or bacon, cut into bite size pieces
  • ¾ cup dry white wine
  • One – 14.5 oz. canned diced tomatoes, Italian blend
  • One – 8 oz can tomatoe sauce
  • Salt to taste
  • Freshly Ground Black Pepper to taste
  • One Box 16 oz Rigatoni
  • One Cup Freshly Grated Romano Cheese

Directions

  1. Heat oil in large skillet over low heat. Saute garlic and red pepper for 4 minutes or until garlic is golden yellow. Remove garlic and discard.
  2. Add Onions to skillet and cook over medium heart about 5 minutes (if using bacon, if using pancetta 8 minutes) until golden brown, stirring frequently
  3. Add pancetta and cook 5 minutes, stirring frequently
  4. Add mushrooms and cook for 1 minute, stirring occasionally.
  5. Add wine and bring to a boil. Cook until wine is almost evaporated, about 6 minutes stirring constantly to avoid burning or sticking.
  6. Add tomatoes and tomato sauce, cook 5 minutes on medium heat until slightly thickened. Season to taste with salt and pepper.
  7. Cook Rigatoni according to package directions; drain and return to pot.
  8. Stir tomato mixture into Rigatoni. Toss gently with cheese. Transfer to serving platter. Top with Fresh Romano Cheese.
